This Colombian coffee is a nanolot of the Java variety with an experimental process—Double Fermentation.

Originating from Java, Indonesia in the 17th century, this single-origin coffee variety has a complicated history. It was introduced by the Dutch during their unfortunate colonial pursuits. We feel a responsibility to share the story, no matter the details. The Java variety are some of the finest beans, carefully cultivated in the Ijen region on the eastern part of the island. Eventually they made their way to Colombia. Both Ijen and Colombia offer similar lush tropical climates and volcanic landscapes, providing the perfect conditions for the flourishing of Java coffee. Nicolas is a dedicated craftsman, and consistently delivers high-quality beans. He is perfecting the art of this experimental Double Fermentation process on his farm.
